From Biaunes, a south-facing, Kimmeridgian-limestone vineyard of Chardonnay planted in 2000, the same geology as Chablis. Bertrand Gautherot has farmed biodynamically at Buxières-sur-Arce since 1998 and makes this Champagne like a white Burgundy, without dosage.
