Vincent Laval farms just 2.5 hectares, with seven Cumières plots and half a hectare of Meunier at Chambrecy, and ploughs with a horse. This taut, mineral Chardonnay on chalk ages on its lees for 18 to 48 months depending on the vintage, without fining or filtration.
